I would like to see a universal composite window with options for a variable number of mullions and rails and a choice of window type (awning, sliding, casement etc within each panel

That would be an enormously complex thing to program, if you want it to be completely customizable after the first placement.

That's the reason GS instead offers so many different window types for you to customize.

The Modular Joinery object has this flexibility regarding the mullion grid, but only for a limited collection of opening types.

The Door and Window Builder add-on is something of the kind, it lets you build whatever you like from scratch.
