I love keyboard shortcuts. I use a lot.
I have ALT-1 to ALT-9 assigned to all kinds of thing like Lock/Unlock, Fillet/Chamfer/Intersect/Split/Align etc.
Hundreds of things can be assigned a shortcut in AC so it is really up to you.
You should set them to the shortcuts that is the most comfortable and self-evident for you.

I wear out Command+5 and command+6 for up and down a story... didn't see those mentioned yet.

All the default short cuts + my own. I find F & Shift+F for moving forward and backward in pet palettes very useful.

Given that I have the mouse permanently welded to my right hand, I restrict my shortcut keys to those I can manage with my left (without straying from the 'home' keys).

Among my favourites:
D dimension
E text mode
W wall
Q measure
Ctrl - ' zoom all
Ctrl - A zoom previous
Ctrl - Q zoom window
Ctrl - X delete
Ctrl - D drag (Ctrl - Alt - D) drag a copy
Ctrl - E rotate (Ctrl - Alt - E) rotate a copy
Ctrl - S mirror (Ctrl - Alt - S) mirror a copy
Ctrl - F fillet
Ctrl - R fillet with radius
Ctrl - Z undo
Ctrl - Alt - Z redo

I've never mastered the Apple key on a MAC. Perhaps this CAD monkey doesn't have an opposable thumb!

All of the above and more. One hand should be working the mouse, and the other the keyboard. CTRL+shift+L for quick layers palette
You can customize them in your work environment.
You can also see and print out what archicad ships with from the keyboard shortcuts window in your work environment
