You can import them from another file using the attribute manager so only the materials and colors you want are imported.
YOu can copy and paste or merge an element with the materials and colors into the file but this will bring in all the attributes from the other file(s).
Or you can create new colors and materials. Open up the material attribute settings dialogue box
Options> Element Attributes>Materials
Select a material that is close to what you want and DUPLICATE it. This one you can adjust the settings as you want.
